What to Use, What to Avoid, and What Actually Matters
```After looking at the controversy surrounding air fryers and microwaves, there is another important question worth asking:
What about everything else that touches our food?
From frying pans and baking sheets to aluminum foil trays, plastic spatulas, wooden spoons, silicone utensils, cutting boards, and food storage containers, our kitchens are filled with different materials.
Social media can make it sound as though every pan, spoon, or storage container is quietly poisoning us. The actual science is much more nuanced.
Certain materials require more care than others, but most commonly used kitchen products are not inherently dangerous when they are well made, undamaged, and used according to the manufacturer's directions.
The most important takeaway: You probably do not need to throw away everything in your kitchen. Start by replacing damaged cookware, peeling coatings, melted utensils, deeply scratched plastics, and products from questionable or unknown sources.
Why the Material Matters
Cookware, utensils, storage containers, and food packaging are considered food-contact materials. Depending on the material, temperature, condition of the product, type of food, and length of contact, small amounts of substances may transfer into food.
That does not automatically mean the food is unsafe. Safety depends on the amount transferred, how often exposure occurs, and the toxicity of the substance involved.
Heat, scratches, acidic foods, salty foods, and long cooking or storage times may increase migration from certain materials.

Best for: Sautéing, browning, soups, sauces, boiling, roasting, and everyday cooking
Advantages:
- Extremely durable
- No coating to peel
- Handles high heat well
- Does not react significantly with most foods
- Often dishwasher safe
Possible concerns:
- Some stainless steel contains nickel
- People with a significant nickel allergy may need nickel-free cookware
- Damaged or heavily pitted pans should be replaced
For most people, stainless steel is an excellent investment and one of the easiest ways to reduce reliance on coated cookware.

Possible concerns:
- Can break or shatter
- Sudden temperature changes can cause thermal shock
- Not all glass is stovetop safe
Do not move a hot glass dish directly onto a cold or wet surface, and never use chipped or cracked glass cookware.
```Ceramic and Ceramic-Coated Cookware
The word ceramic can be confusing because solid ceramic cookware and ceramic-coated metal cookware are not the same thing.
Solid ceramic is made primarily from ceramic material. Ceramic-coated cookware usually has a metal base covered with a nonstick coating made using silica-based materials.
Advantages:
- Often marketed without PTFE
- Easy to clean
- Requires less cooking oil when new
Possible concerns:
- The coating may lose its nonstick performance over time
- Chipping or deep scratching means the pan should be replaced
- Quality varies significantly by manufacturer
- Decorative, handmade, vintage, or poorly regulated ceramics may contain lead or cadmium in glazes
Buy ceramic cookware from reputable manufacturers that clearly state the product is intended for food use and complies with applicable safety standards.
```Modern Nonstick Cookware
Most traditional nonstick cookware uses PTFE, commonly associated with the brand name Teflon.
PTFE belongs to the broad PFAS family, but polymerized nonstick coatings behave differently from many smaller PFAS chemicals associated with contaminated water and environmental exposure.
According to the FDA, properly manufactured nonstick coatings are tightly bound to cookware and contain a negligible amount of PFAS capable of migrating into food.
Nonstick cookware is best used with a few precautions:
- Use low or medium heat
- Do not preheat an empty pan for a long time
- Avoid broilers and extremely high-temperature cooking
- Use wood, silicone, or non-scratching utensils
- Replace pans that are peeling, deeply scratched, warped, or flaking
- Follow the manufacturer's maximum temperature guidance
An intact nonstick pan used properly is not the same as a badly damaged pan exposed repeatedly to excessive heat.
For eggs or delicate foods, a well-maintained nonstick pan can be practical. Stainless steel, cast iron, or carbon steel may be better choices for searing and high-heat cooking.
```Aluminum Cookware
Aluminum conducts heat efficiently, is lightweight, and is widely used in pots, pans, baking sheets, foil, and disposable trays.
Small amounts of aluminum can transfer into food, especially from uncoated aluminum when it is used with acidic or salty foods. However, Health Canada reports that most studies have found the amount transferred from cookware, utensils, and wrapping materials is generally negligible.
Anodized aluminum has been treated to create a harder, more stable surface that is less reactive than untreated aluminum.
Use aluminum cookware more wisely:
- Avoid storing food in uncoated aluminum for long periods
- Limit prolonged contact with tomato, vinegar, citrus, rhubarb, or heavily salted foods
- Do not scrub uncoated aluminum aggressively with abrasive cleaners
- Replace cookware that is heavily pitted, warped, or deteriorating
- Choose anodized aluminum when purchasing new cookware
Aluminum Foil and Disposable Foil Trays
Aluminum foil and disposable trays are not automatically dangerous. They are convenient for roasting, grilling, transporting food, holiday meals, and occasional baking.
Transfer is more likely when aluminum is in prolonged contact with acidic or salty food, especially at higher temperatures.

- Roasting vegetables
- Covering a casserole
- Wrapping a baked potato
- Transporting food for a gathering
- Occasional holiday or party use
Use More Caution
- Storing tomato sauce overnight
- Long cooking with citrus or vinegar
- Very salty marinades
- Using damaged or unstable trays
- Placing foil where it could contact heating elements
For acidic foods such as lasagna, lemon chicken, or tomato-based casseroles, a glass, stainless steel, enameled, or ceramic baking dish may be a better everyday choice.
If using a disposable foil tray for a heavy meal, place it on a sturdy baking sheet. Thin trays can bend, creating a much more immediate risk of burns and spills than chemical exposure.
Silicone Spatulas, Spoons, and Baking Tools
Quality food-grade silicone can be a useful choice for spatulas, spoons, baking mats, molds, and tools used with nonstick cookware.
Advantages:
- Flexible and gentle on cookware
- Heat resistant within its rated temperature range
- Does not scratch nonstick surfaces
- Easy to clean
What to look for:
- Clearly labeled food-grade silicone
- A stated temperature limit
- A reputable manufacturer
- A solid, smooth surface without cracks or sticky deterioration
Do not assume every silicone-looking utensil is identical. Some inexpensive products may contain fillers or lower-quality materials.
Replace silicone tools that become sticky, cracked, torn, permanently damaged, or develop an unusual odor during normal use.
```Plastic Spatulas and Cooking Spoons
Plastic utensils are not automatically hazardous, but repeated high-heat use can cause some plastics to soften, warp, degrade, or shed particles.
A plastic spoon used to toss a cold salad presents a very different situation from a damaged spatula left resting against the side of a hot frying pan.
Replace a plastic cooking utensil when it is:
- Melted or warped
- Deeply scratched
- Cracked or flaking
- Rough around the edges
- Discolored from heat damage
- No longer marked or known to be heat safe
For routine cooking, I prefer wood, stainless steel, or quality silicone. The goal is not panic. It is simply reducing unnecessary heat exposure when an easy alternative is available.
```What About Black Plastic Utensils?
Black plastic spatulas and spoons received significant attention after research found flame-retardant chemicals in some black plastic household products.
The concern is that recycled electronic plastics may occasionally enter consumer recycling streams and be used in products that were never intended to contain flame retardants.
An early exposure estimate connected with the widely publicized research contained a calculation error and overstated estimated exposure. That correction reduced the estimated risk, but it did not erase the finding that some tested items contained unwanted flame-retardant chemicals.
My practical recommendation:
You do not need to panic over touching a black plastic spoon. However, if you are replacing cooking utensils anyway, choosing wood, stainless steel, or quality silicone is a simple and relatively inexpensive precaution.
Wooden Spoons and Utensils
Wood is a reliable, practical material for spoons, spatulas, and cutting boards. It is gentle on cookware and does not melt against a hot pan.
Advantages:
- Does not scratch cookware
- Does not melt
- Comfortable to handle
- Can last for years with proper care
Care tips:
- Wash promptly with soap and water
- Do not soak for long periods
- Allow to dry completely
- Replace utensils that split, crack, splinter, or retain strong odors
Plastic Food Storage Containers
Plastic storage containers can be convenient, especially for cold food. The bigger concern is using old, damaged, or non-microwave-safe plastic for reheating.
Better Practices
- Use glass for reheating when practical
- Use containers labeled microwave safe
- Vent lids according to directions
- Allow very hot food to cool before transferring it to plastic
Avoid
- Heating food in takeout containers not intended for reuse
- Microwaving yogurt tubs or margarine containers
- Using cracked, cloudy, warped, or badly scratched containers
- Allowing plastic wrap to touch food unless its directions permit it
The FDA notes that some plastic containers should not be used in microwave ovens because the heat from the food may cause them to melt.
```Cutting Boards
Both wood and food-grade plastic cutting boards can be used safely when they are cleaned correctly and replaced when badly damaged.
Research does not support the blanket claim that plastic is always more sanitary than wood. Cleaning, drying, surface condition, and cross-contamination practices matter greatly.
The most important cutting-board rules:
- Use separate boards for raw meat and ready-to-eat foods when possible
- Wash boards thoroughly after each use
- Allow wood to dry completely
- Replace plastic boards with deep knife grooves
- Replace wooden boards that crack, split, or develop difficult-to-clean gaps
Plastic cutting boards may also shed particles as knives repeatedly cut across the surface. This does not mean one plastic cutting board creates an immediate health emergency, but it provides another reason to replace heavily scored boards.
```Imported, Vintage, and Handmade Cookware
One concern that deserves more attention is cookware made with unknown metals, pigments, or glazes.
In 2025, the FDA warned consumers about certain imported cookware products that could leach lead into food. Lead exposure can be especially harmful to children and pregnant women, and no amount of lead exposure is considered desirable.
Use additional caution with:
- Cookware with no manufacturer information
- Decorative pottery not labeled food safe
- Vintage ceramics with unknown glazes
- Imported metal cookware from uncertain sources
- Pieces that create unusual metallic tastes or discolor food
Decorative ceramics should not automatically be assumed safe for cooking or serving food.
Who Should Be Especially Thoughtful?
Everyone can benefit from using cookware properly, but a few groups may wish to be more cautious:
- Pregnant people and young children, particularly regarding lead and unknown food-contact materials
- People with nickel allergies who react to certain stainless-steel products
- People with medical conditions involving excess iron who use cast iron frequently
- Anyone cooking several meals daily in badly damaged cookware
- People using imported, vintage, handmade, or unmarked cookware with unknown composition

- Glass containers for reheating and leftovers
- Wooden spoons
- Quality silicone spatulas
- A sturdy wood or food-grade plastic cutting board in good condition
The Bottom Line
Kitchen safety does not require fear, perfection, or replacing every pan in your cupboard.
Stainless steel, cast iron, carbon steel, glass, wood, and quality silicone are excellent choices. Modern nonstick cookware, ceramic coatings, aluminum foil, and disposable foil trays can also be used reasonably when they are in good condition and used as intended.
The items deserving the most attention are damaged coatings, melted plastic utensils, badly scratched containers, cracked cookware, and products made from unknown materials.
